Method
1. Slow Cooker Method
To start with the slow cooker version, gather all your ingredients except the noodles, spring onions, and sesame seeds. Place the chopped shallots, sliced red pepper, chicken breast, honey, both light and dark soy sauces, water, chicken stock pot, and the garlic, chilli, and ginger into your slow cooker. In a small bowl, mix the cornflour with a splash of cold water to make a smooth slurry, then pour that in as well. This helps the sauce thicken up as it cooks. Give everything a good stir to make sure the chicken is coated in the sauce and seasonings. Set your slow cooker to high for 4 hours or low for 7–8 hours, and let it do its thing.
Once the cooking time is done, the chicken should be super tender. Use a fork or spoon to gently break it up or shred it slightly inside the pot. If you’re using dried noodles, cook them separately according to the package instructions. If you’re using straight-to-wok noodles, you can just toss them straight into the slow cooker. Stir the noodles in well, allowing them to soak up all that sticky, flavorful sauce. Finally, mix in chopped spring onions and sprinkle the sesame seeds over the top. Give everything one last stir and it’s ready to serve!
2. Stovetop Method
For the stovetop version, heat a splash of oil in a large pan over medium heat. Once hot, add the chopped shallots, sliced red pepper, and the chicken breast pieces. Cook everything for around 5–7 minutes, stirring often, until the chicken starts to brown slightly and the vegetables soften.
Next, reduce the heat slightly and add the honey, light and dark soy sauces, water, chicken stock pot, garlic, chilli, and ginger. Just like in the slow cooker version, you’ll want to mix your cornflour with a splash of cold water first before adding it in this prevents any clumps and helps the sauce thicken properly. Stir everything together well and let the mixture simmer gently for 10–15 minutes, uncovered, until the sauce thickens and becomes sticky.
While the sauce is simmering, cook your noodles in a separate pot if you’re using dried noodles. If you’re using straight-to-wok noodles, you can add them directly to the pan once the sauce is ready. Stir the noodles through the chicken mixture until everything is evenly coated. Then, sprinkle in the chopped spring onions and sesame seeds, give it one final stir, and it’s good to go!

Directions
- Slow Cooker Method
Add everything except the noodles, spring onions, and sesame seeds into the slow cooker.
Give it all a good stir.
Cook on high for 4 hours or low for 7–8 hours.
Once done, shred the chicken slightly with a spoon or fork.
Stir in the cooked noodles (or use straight-to-wok noodles).
Mix in spring onions and sesame seeds before serving! - Stovetop Method
Heat a splash of oil in a large pan.
Sauté the shallots, pepper, and chicken until slightly golden.
Add all the remaining ingredients (except noodles, spring onions, and sesame seeds).
Let it simmer for about 10–15 minutes until thick and saucy.
Stir in the cooked noodles.
Sprinkle over chopped spring onions and sesame seeds. Done!
Notes
- Don’t skip mixing the cornflour in a separate bowl first adding it dry can make the sauce lumpy.
- If using straight-to-work noodles, be sure not to overcook them when stirring in or they’ll go mushy.
- If using the stovetop method, watch the sauce closely. Soy sauce can burn quickly if the heat’s too high.
- Make sure to stir the slow cooker mixture before cooking so all the chicken gets coated evenly.
