Directions

  • For the Wedges 
    Preheat your oven to 210°C (410°F).
    Chop your potatoes into wedges thick or thin, your call!
    Place them in a bowl and microwave for 5 minutes to soften them up.
    Spray with fry light and season with paprika, salt, and pepper. Give them a good shake in the bowl to coat evenly.
    Transfer to an air fryer at 190°C (375°F) for 25 minutes, or spread on a baking tray and roast in the oven for 30–40 minutes, flipping halfway.
  • For the Pizza Chicken 
    Slice your chicken breast down the middle (but don’t go all the way through) to butterfly it.
    Flatten it out a bit so it cooks evenly.
    Spread 1 tbsp of tomato purée over the top.
    Sprinkle 25g of grated cheese over the purée.
    Top with 4 slices of mini chorizo, and finish with a sprinkle of mixed herbs.
    Cover loosely with foil and bake at 180°C (350°F) for 20 minutes, removing the foil halfway through so the toppings get a little crispy.

Notes

  • Microwaving the wedges first is a must it softens the inside, so they crisp perfectly on the outside without burning.
  • Don’t skip the foil on the chicken at first. It keeps the meat juicy while still letting the toppings cook nicely once uncovered.
  • Make sure your chicken breast is evenly flattened, or you might get one end dry and the other undercooked.
  • Keep an eye on your wedges if using the oven they can go from golden to too crispy pretty fast!
