Hey, food lovers!  Let me introduce you to a brand-new creation I whipped up, and trust me, it’s absolutely delicious! These Nandos Enchilidos are a fun twist on your regular wraps. Initially, I had planned to make some air-fried wraps, but when I saw some leftover sauce and cheese, I thought, “Why not make baby enchiladas instead?” So, here we are with these flavor-packed, mini-enchilada creations, perfect for a quick dinner or snack. They’re crispy on the outside, cheesy on the inside, and just oozing with flavor! 

Method 

Cook the Chicken & Onion

First, spray a frying pan with Frylight to prevent sticking and add the chicken fillets. Cook the chicken on medium heat for about 5-7 minutes until it turns golden brown and is fully cooked through. While the chicken cooks, slice half a red onion into thin strips and add it to the pan with the chicken. Stir occasionally to ensure that the onion softens and caramelizes, blending with the chicken for a delicious, savory flavor. Once the chicken is cooked, remove the pan from the heat and set it aside to cool slightly.

Mix the Sauce

In a small mixing bowl, combine the Nando’s medium sauce and lighter than light mayo. Stir well until both ingredients are fully incorporated. Then, add the sweet chili jam to the mixture and continue mixing until the sauce is smooth and uniform. This will give your enchilidos a perfect balance of spicy and sweet flavors, which will coat the chicken and add a zesty kick.

Assemble the Enchilidos

Now it’s time to build the enchilidos! Lay out the five mini wraps on a flat surface. Take a spoonful of the cooked chicken and onion mixture and spread it evenly down the center of each wrap. Spoon a generous amount of the sauce over the chicken, followed by a sprinkle of both reduced-fat mozzarella and cheddar cheese. Be sure not to overfill each wrap, as this will make rolling them up difficult. Carefully fold in the sides of the wrap and roll it tightly, ensuring all the fillings are secure inside.

Top with Cheese & Sauce

Once your wraps are tightly rolled, place them into the air fryer basket. Drizzle the remaining sauce over the top of each wrap. Then, sprinkle the leftover mozzarella and cheddar cheese on top, ensuring a cheesy, gooey finish that will melt perfectly during the air-frying process. This step ensures that every bite will have a creamy, cheesy topping.

Air Fry

Preheat your air fryer to 200°C. Once it’s heated, place the wrapped enchilidos into the air fryer and cook for about 5 minutes. Keep an eye on them to ensure they turn golden and crispy on the outside, but not overcooked. You may want to check them halfway through the cooking time to ensure they are cooking evenly. The air fryer gives them a perfect crispy texture while keeping the inside nice and cheesy.

Ingredients

  • 300g chicken breast (cut into mini fillets)

  • 1/2 a red onion (sliced)

  • 5 mini wraps

  • 1 tbsp Nando’s medium sauce mixed with 1 tbsp lighter than light mayo

  • 1 tbsp sweet chilli jam

  • 50g reduced fat mozzarella

  • 30g 50% reduced fat cheddar

Directions

  • Cook the Chicken & Onion  Spray a frying pan with Frylight, then cook the chicken fillets and sliced red onion until golden and cooked through. This usually takes about 5–7 minutes.
  • Mix the Sauce  In a small bowl, mix together the Nando’s medium sauce with the lighter than light mayo. Add the sweet chilli jam and stir until it’s well combined.
  • Assemble the Enchilidos  Lay out the mini wraps and add the cooked chicken and onion mixture. Spoon over some of the sauce and sprinkle on the mozzarella and cheddar cheese. Roll them up tightly.
  • Top with Cheese & Sauce  Place the rolled-up wraps in the air fryer. Drizzle the remaining sauce on top of each and sprinkle with the leftover cheese.
  • Air Fry  Set the air fryer to 200°C and cook for 5 minutes or until the enchilidos are golden and crispy.

Notes

  • Be careful not to overfill the wraps with the sauce and cheese; you don’t want them to leak when cooking in the air fryer.
  • Ensure the chicken is cooked through before assembling the enchilidos.
  • Air fryer temperatures can vary, so make sure to check the enchilidos halfway through the cooking time to avoid burning.

Serving Suggestions
