Perfect for a tasty lunch or dinner, this wrap is easy to make, and once you taste it, you’ll want to make it again and again. Let’s dive into this flavor-packed journey!

Method

Cook the Chicken & Shallots

To begin, heat a frying pan over medium heat and lightly spray it with some low-calorie spray or Frylight to avoid excess oil. Add the chopped shallot into the pan and sauté it until softened. Once the shallot is translucent, toss in the raw chicken breast cubes. Stir the chicken occasionally to ensure it cooks evenly and thoroughly, turning a golden brown on all sides. The goal is to cook the chicken until it’s fully cooked through, which usually takes around 6-8 minutes depending on the size of the cubes.

Add the Flavors

Once the chicken is cooked, it’s time to bring in those delicious Korean flavors. Add the gochujang paste, honey, and soy sauce into the pan with the chicken and shallots. Stir everything together, ensuring that the chicken is thoroughly coated with the sauce mixture. The heat from the pan will help meld the ingredients together, creating a savory, slightly sweet, and spicy sauce that will infuse the chicken with bold flavors. Continue stirring for about 1-2 minutes until the sauce thickens slightly and clings to the chicken.

Prepare the Wrap Filling

Transfer the flavorful chicken mixture into a mixing bowl. Next, add the chopped kimchi, kewpie mayo, mozzarella cheese mix, and sesame seeds into the bowl with the chicken. Stir well to combine all the ingredients. The kimchi will add a nice tangy crunch, while the kewpie mayo will bring a creamy richness to balance out the spice from the gochujang. The mozzarella will melt beautifully when wrapped, creating a deliciously gooey texture inside the wrap. Make sure everything is evenly mixed for maximum flavor in every bite.

Prepare the Wrap

To make the wrap more pliable and easier to fold, microwave the wrap for about 10-15 seconds. This step makes it more flexible, ensuring it won’t tear when you roll it up. Place the warm wrap on a flat surface and spoon the chicken mixture into the center. Carefully fold in both sides of the wrap, and then roll it tightly, tucking in the edges as you go. This technique helps secure the filling inside and ensures everything stays in place when you crisp it up in the pan.

Crisp the Wrap

After rolling the wrap, it’s time to crisp it up! Spray your pan with a little more Frylight and place the wrap seam side down into the pan. Let it cook for 2-3 minutes on each side, or until it turns golden and crispy. This step is crucial to give the wrap a delightful crunch and to seal everything inside. Be sure to flip it carefully to avoid spilling the filling, and cook until both sides are crispy and brown.

Cool & Drizzle

Once the wrap is crispy and golden, remove it from the pan and let it rest for about 5 minutes. This cooling time is important because it allows the filling to set, making it easier to cut and enjoy without the hot filling spilling out. After the cooling period, drizzle some extra kewpie mayo on top for an extra burst of creaminess and flavor. Now, it’s time to dive in and enjoy this delicious, crunchy, creamy, and spicy Korean Chicken Wrap!

Notes

  • When frying the chicken, make sure not to overcrowd the pan, as it will make the chicken cook unevenly.
  • Be careful with the gochujang paste – it’s spicy, so add just a bit if you’re not a fan of too much heat!
  • The wrap will be hot after cooking, so let it cool a bit before you take that first bite. Patience, my friend!
