I’m so excited to share this one with you! These Creamy Cajun BBQ Chicken Wraps are a flavor bomb smoky, sweet, spicy, and cheesy all at once. They’re stuffed with juicy chicken, a creamy BBQ sauce, and gooey mozzarella, all wrapped in a golden tortilla. Perfect for a quick dinner or an impressive lunch. And yes, I used my @morphyrichardsuk dual air fryer to make it extra simple (and crispy!). Let’s get into it!

Method

Marinate the Chicken

Start by preparing your chicken marinade. In a large mixing bowl, add 1 tsp ground paprika, 2 ½ tsp Cajun seasoning, 1 tsp garlic granules, ½ tbsp olive oil, the juice of half a lemon, and a generous pinch of salt and pepper. Give everything a good stir until well combined. Then, add in your 400g of chicken mini fillets and use your hands or tongs to fully coat each piece with the marinade. You can let it sit for 10–15 minutes to absorb the flavors, or cook it right away if you’re short on time. Either way, this bold spice mix brings the smoky Cajun flavor front and center.

Cook the Chicken

Once marinated, place your chicken mini fillets into your air fryer basket (or on a baking tray if using the oven). Cook them at 180°C for about 10–12 minutes, flipping halfway if needed, until the chicken is fully cooked through and golden on the outside. The air fryer gives it a lightly crisp texture without needing extra oil. After cooking, set the chicken aside on a plate and let it rest for a few minutes before chopping it into bite-sized pieces.

Make the Sauce Base

Now, it’s time to build that creamy Cajun BBQ base. In a large skillet or pan, heat 1 tbsp olive oil over medium heat. Add your diced onion and diced bell pepper to the pan. Sauté for about 3–4 minutes until the veggies soften and start to turn slightly golden. Next, add in your grated garlic cloves, another 2 tsp Cajun seasoning, 1 tsp dried parsley, and 2 tbsp of tomato purée. Stir everything together and cook for another minute until fragrant. This step deepens the flavor and gets the base ready for the sauce.

Cream It Up

Pour in 270ml of hot vegetable stock and add 2 tsp soft cheese directly into the pan. Stir until the cheese melts completely and blends into the stock, creating a smooth and creamy consistency. Let the sauce simmer gently for 5–6 minutes. Stir occasionally to prevent sticking and allow it to thicken slightly. The result is a rich, creamy sauce with a spicy Cajun kick.

Add Chicken & BBQ Sauce

Once your sauce is creamy and bubbling, toss in the cooked chicken pieces and pour in 80ml of honey chipotle BBQ sauce. Mix thoroughly so that every piece of chicken is coated in the sweet, smoky, and spicy sauce. Let it simmer for 1–2 minutes, just enough for the flavors to come together. This mixture is what makes the wraps truly irresistible creamy, saucy, and packed with flavor.

Assemble the Wraps

Lay out your tortilla wraps flat on a clean surface. Sprinkle a layer of grated mozzarella cheese (about 1–2 tablespoons) across the center of each wrap. Spoon on a generous amount of the chicken mixture, making sure not to overfill. Then, sprinkle more mozzarella on top of the filling for extra meltiness. Carefully fold the wraps like a burrito fold the sides in first, then roll from the bottom up tightly so nothing falls out.

Crisp Them Up

To finish, give the outside of the wraps a quick spray of olive oil. If you’re using an air fryer, cook them at 180°C for about 4–5 minutes until the wraps turn golden and slightly crisp. If you’re pan-frying, heat a dry non-stick skillet over medium heat and toast each side of the wrap for 2–3 minutes until golden and sealed. This final step adds that perfect crunch on the outside while keeping the inside warm and cheesy.
