Directions

  • Start by heating a pan on high heat, then add your spicy diced chorizo. Cook it until the juices run and it gets nice and crispy. Remove most of the chorizo from the pan, leaving about ¼ of it still crisping up in the pan. Set it aside  this will be used to top the soup later for a burst of flavor!
  • Now, grab your slow cooker. Add in the crispy chorizo (you saved earlier), along with the following ingredients: chopped onion, vine tomatoes, garlic cloves, tomato puree, sugar, and vegetable stock. Add a pinch of salt and pepper to taste.
