Cheesy Bacon BBQ Potatoes  A Comforting Delight

Hey food lovers! If you’re craving something that’s hearty, cheesy, and packed with smoky BBQ flavor, then you are in the right place! This Cheesy Bacon BBQ Potato recipe is the perfect balance of comfort food and a flavor explosion, all while being super simple to make. With crispy potatoes, savory bacon, melted cheese, and a hint of BBQ sauce, it’s a dish you won’t want to miss. Plus, it’s super versatile and can be enjoyed as a snack, side dish, or even a main! Let’s dive right into the details.

Method

Prepare the Bacon and Onions

Start by heating a small amount of Frylight spray in a frying pan over medium heat. Add the diced onion and bacon lardons to the pan. Stir occasionally, allowing the onions to soften and the bacon to become crispy. This step should take about 5-7 minutes. The onions will release a lovely fragrance and become translucent, while the bacon will crisp up perfectly, giving the dish a rich, savory base.

Air Fry the Potatoes

While the bacon and onions are cooking, it’s time to focus on the potatoes. Take the chopped potatoes (2cm cubes) and place them in your air fryer basket. Spray the potatoes with Frylight to help them crisp up as they cook. Season the potatoes generously with salt and pepper, tossing them around to ensure an even coating. Set the air fryer to 200°C and cook the potatoes for about 20 minutes, or until they are golden and crispy on the outside. If you’re using an oven instead of an air fryer, spread the potatoes on a baking sheet and bake them for about 40 minutes, turning them halfway through to ensure they cook evenly.

Combine Potatoes with Bacon & BBQ Sauce

Once your potatoes are golden and crispy, it’s time to bring everything together. Take the cooked bacon and onions from the pan and pour them over the crispy potatoes. Add in 60ml of sugar-free BBQ sauce (I love using @myprotein BBQ sauce for a flavorful, low-calorie option). Gently stir everything together so the BBQ sauce evenly coats the potatoes and bacon. The combination of smoky bacon and tangy BBQ sauce will infuse the potatoes with delicious flavor.

Top with Cheese

Now comes the cheesy goodness! Transfer the potato mixture into a baking dish, making sure it’s spread evenly. Sprinkle the grated mozzarella and 50% fat cheese on top of the mixture. Make sure to cover the entire surface with cheese for that irresistible melty topping. Once you’ve topped it off, pop the dish under the grill for a couple of minutes. Watch closely as the cheese melts and becomes bubbly and golden. This step usually takes just 2-3 minutes, so keep an eye on it to prevent burning.

Garnish

Once the cheese is perfectly melted and bubbly, remove the dish from under the grill. To add a fresh, crunchy contrast to the richness of the cheese, sprinkle some finely chopped spring onions on top. This not only adds a pop of color but also a burst of flavor that complements the smoky BBQ potatoes beautifully.

Ingredients

  • 650g potatoes (chopped into 2cm cubes)

  • Frylight spray (for cooking)

  • Salt & pepper (to taste)

  • 1 onion (diced)

  • 150g unsmoked bacon lardons

  • 60ml sugar-free BBQ sauce (I use @myprotein BBQ sauce)

  • 30g mozzarella (grated)

  • 30g 50% fat cheese (grated)

Directions

  • Prepare the bacon and onions  Heat a little Frylight spray in a frying pan. Add the diced onion and bacon lardons and cook until softened and the bacon is crispy. This should take about 5-7 minutes.
  • Air fry the potatoes  While the bacon and onions are cooking, place the chopped potatoes in the air fryer. Spray them with Frylight and season with salt and pepper. Air fry at 200°C for about 20 minutes, or until they are golden and crispy. If you don’t have an air fryer, bake them in the oven for around 40 minutes.
  • Combine potatoes with bacon & BBQ sauce  Once the potatoes are cooked, add them to the pan with the bacon and onion mixture. Pour in the sugar-free BBQ sauce and mix everything together.
  • Top with cheese  Transfer the mixture to a baking dish and top with mozzarella and 50% fat cheese. Pop it under the grill for a couple of minutes until the cheese is melted and bubbly.
  • Garnish  Add some spring onions on top for extra flavor and crunch.

Notes

  • Cheese melting  Keep an eye on your cheese under the grill to make sure it doesn’t burn. It melts quickly, so just a minute or two is all you need.
  • Crispy potatoes  If you’re using an oven instead of an air fryer, make sure to spread the potatoes out evenly on the baking sheet. If they’re too crowded, they’ll steam instead of crisping up.
  • BBQ sauce  Be sure to stir in the BBQ sauce well so that it coats the potatoes and bacon evenly for that perfect smoky flavor.
