Sweet Potato and Tuna Patties 

I absolutely love simple meals that hit all the right notes tasty, easy, and packed with protein. That’s exactly what these Sweet Potato and Tuna Patties are! Every bite is warm, comforting, and full of flavor, plus they’re super quick to make. I first made this recipe after being inspired by @foodfitnesstreats and @hans_foodandfitness, and it’s been on repeat ever since.

They’re awesome on their own or served with a side of roasted veggies and something spicy like peri-peri rice. If you’re short on time but still want something nourishing and homemade, this recipe is a total winner. You only need a handful of ingredients, and you’ll end up with patties that are golden, crispy, and perfect for lunch, dinner, or meal prep!

Method

Cook the Sweet Potato

Start by cooking your sweet potato until it’s soft all the way through. The quickest method is using a microwave simply poke a few holes in the potato with a fork, place it on a microwave-safe plate, and cook it on high for 6 to 8 minutes. If you have more time or prefer oven-baked, wrap the potato in foil and bake it at 200°C (about 400°F) for 40–45 minutes until soft. You’ll know it’s ready when you can easily poke a knife through the center with no resistance.

Scoop and Mash

Once the sweet potato is cooked, carefully cut it open lengthwise and allow it to cool for a minute or two so you don’t burn your hands. Then, use a spoon to scoop out the soft orange flesh and place it into a medium mixing bowl. Mash it with a fork or potato masher until smooth, making sure there are no big chunks left behind.

Mix Everything Together

To your mashed sweet potato, add the drained tuna (make sure it’s not watery), whisked egg, breadcrumbs, and your chosen seasonings. I like to use garlic powder, paprika, salt, and pepper for a nice balance of flavor. Mix all the ingredients thoroughly using a spoon or your hands until everything is well combined and the mixture starts to hold together. It should be moist but firm enough to shape.

Shape and Fry

Once your mixture is ready, divide it into three equal portions and gently shape each into a patty. Don’t press too hard just enough to form a round, thick shape. Heat a non-stick frying pan over medium heat and spray it with Frylight or any low-calorie oil spray. Once the pan is hot, carefully place the patties in and let them cook for about 4 to 5 minutes on each side. Flip them only once during cooking to keep them from breaking apart. You’ll know they’re done when both sides are golden brown and the patties are heated through.

Ingredients

  • 1 large sweet potato

  • 1 tin of tuna (110g), rinsed and drained

  • 1 egg, whisked

  • 10g breadcrumbs

  • Garlic powder

  • Paprika

  • Salt and pepper

  • Fry light spray or any low-calorie oil spray

Directions

  • Cook the Sweet Potato. Pop your sweet potato in the microwave for about 6–8 minutes until it’s soft. Or bake it in the oven if you have more time.
  • Scoop and Mash. Once soft, cut it open carefully and scoop the inside into a bowl. Mash it well with a fork.
  • Mix Everything Together. Add your drained tuna, whisked egg, breadcrumbs, and seasonings. I used garlic, paprika, salt, and pepper, but feel free to tweak it to your taste! Mix until it all sticks together nicely.
  • Shape and Fry  Divide the mixture into three equal patties. Spray a non-stick pan with Frylight and fry the patties on medium heat for about 4–5 minutes on each side, or until golden brown and heated through.

Notes

  • Make sure your sweet potato is really soft before mashing if it’s too firm, your patties won’t hold well.
  • Drain the tuna thoroughly to avoid soggy patties.
  • If your mix feels too wet, just add a tiny bit more breadcrumbs.
  • Let the pan heat up before adding the patties to get that crisp golden crust.

  • Roasted or steamed veggies (carrots, zucchini, broccoli)
  • A side of rice    I loved using @tildarice peri-peri basmati for a spicy kick
  • A dollop of Greek yogurt or garlic mayo on the side

Did you know sweet potatoes are loaded with beta-carotene, which turns into vitamin A in your body? That’s great for your eyes and skin and it adds that lovely orange color too!
