I’m not just saying this because I made them I promise, they taste amazing, and even better when you have leftovers the next day! These taquitos are the perfect balance of savory chicken, spicy seasoning, and a creamy satay sauce. You’re definitely going to want to save this recipe for your next meal prep or family dinner.

Method

1. Fry the Chicken

Start by heating 1 tsp of olive oil in a frying pan over medium heat. Once the oil is hot, add the 300g of chicken breast cut into small chunks and 100g of red pepper cut into strips. Cook them until the chicken is fully cooked through and the peppers have softened. This should take about 5-7 minutes. Stir occasionally to ensure the chicken doesn’t stick to the pan and the peppers cook evenly.

2. Season the Filling

Once the chicken and peppers are cooked, it’s time to add the flavor! Sprinkle in 1 tsp of chicken seasoning, 1/2 tbsp of tikka curry powder, 1/2 tsp of chili flakes, and 1/2 tsp of garlic powder. Stir everything together to coat the chicken and peppers in the seasoning. Pour in 100ml of vegetable stock to help bring everything together and create a slightly saucy base. Let it simmer for about 10 minutes, stirring occasionally, until the stock reduces and the mixture thickens slightly. After that, stir in 13g of MyProtein peanut butter powder to give the filling a creamy texture and a deliciously nutty flavor. Once everything is well combined, your filling is ready!

3. Make the Satay Sauce

While the filling is simmering, move on to the satay sauce. In a separate bowl, whisk together 1/2 tsp of garlic powder, 50ml of vegetable stock, 30ml of light soy sauce, 1 tbsp of honey, and 15g of MyProtein peanut butter powder. Whisk until the mixture is smooth and all ingredients are well combined. This will create a creamy, savory sauce that complements the filling perfectly.

4. Prepare the Taquitos

To make the wraps more flexible, pop your wraps into the microwave for a few seconds. This will make them easier to roll up without breaking. Once they’re warm and soft, spread a spoonful of the satay sauce evenly over each wrap. Be generous, as the sauce adds a great depth of flavor. Next, spoon the chicken and pepper mixture onto each wrap, spreading it evenly across the surface. Once your wrap is filled, roll it up tightly to form the taquito shape. You want the filling to stay in place, so make sure each one is securely rolled.

5. Cook the Taquitos

Now it’s time to cook the taquitos! If you’re using an air fryer, lightly spray the taquitos with cooking spray to help them crisp up. Preheat your air fryer to 180°C and arrange the taquitos inside, making sure not to overcrowd them. Cook for about 5-8 minutes, or until the taquitos are golden brown and crispy on the outside. If you don’t have an air fryer, you can also bake them in the oven or pan-fry them. Just make sure to flip them halfway through to get an even crispness on both sides.

6. Top Them Off

Once your taquitos are crispy and golden, drizzle the remaining satay sauce over the top for an extra burst of flavor. Then, sprinkle the taquitos with 15g of mixed chopped nuts and 1 tsp of sesame seeds. These toppings will add crunch and extra flavor that will elevate the taquitos even more.

Ingredients

  • 1 tsp olive oil

  • 300g chicken breast, cut into small chunks

  • 100g red pepper, cut into strips

  • 1 tsp chicken seasoning

  • 1/2 tbsp tikka curry powder

  • 1/2 tsp chili flakes

  • 1/2 tsp garlic powder

  • 100ml vegetable stock

  • 13g MyProtein peanut butter powder

  • For the satay sauce

  • 1/2 tsp garlic powder

  • 50ml vegetable stock

  • 30ml light soy sauce

  • 1 tbsp honey

  • 15g MyProtein peanut butter powder

  • To top the wraps

  • 15g mixed chopped nuts

  • 1 tsp sesame seeds

Directions

  • Fry the Chicken  Start by heating up the olive oil in a frying pan. Add the chicken and red pepper and cook until the chicken is thoroughly cooked and the peppers are softened.
  • Season the Filling  Once the chicken and peppers are cooked, stir in the chicken seasoning, tikka curry powder, chili flakes, and garlic powder. Add the vegetable stock and let it simmer for about 10 minutes. Then stir in the MyProtein peanut butter powder to create a deliciously creamy filling.
  • Make the Satay Sauce  In a separate bowl, whisk together garlic powder, vegetable stock, soy sauce, honey, and MyProtein peanut butter powder.
  • Prepare the Taquitos  Microwave your wraps for a few seconds to make them soft and flexible. Spread a spoonful of the satay sauce onto each wrap. Add the chicken mixture on top, then roll them up tightly.
  • Cook the Taquitos  Spray the taquitos with cooking spray and pop them into the air fryer (or oven) at 180°C for 5-8 minutes, or until crispy and golden.
  • Top Them Off  Drizzle the remaining satay sauce over the taquitos and sprinkle with mixed chopped nuts and sesame seeds for that extra crunch.

Notes

  • When frying the chicken, make sure not to overcook it, as that can make it tough and dry. Keep an eye on it and stir occasionally.
  • If you’re using an air fryer, don’t overcrowd the taquitos. It’s best to cook them in batches for that perfect crispy texture.
  • For the satay sauce, adjust the honey and soy sauce to your taste. If you prefer a sweeter sauce, add a little more honey. For a more savory kick, try a little more soy sauce.

These taquitos are perfect on their own, but if you’re feeling extra fancy, serve them with a side of fresh avocado or a light salad.
