Method

Fry the Filling

Fry them together with the garlic until the beef is browned and the onions become soft and translucent. Stir occasionally to ensure even cooking. Once the beef is cooked through, add in the tomato purée, ketchup, Worcester sauce, passata, beef stock cube, and all of the spices, including paprika and oregano. Stir the mixture well to combine all the ingredients, and let it simmer on low heat for about 10 minutes. Prep the Wraps 

While the filling is simmering, prepare the mini wraps by microwaving them for a few seconds until soft and pliable. This will make them easier to roll. Once your wraps are ready, take each one and spread about a teaspoon of the homemade burger sauce across the center. The sauce adds a creamy and tangy layer to the taquitos, complementing the meaty filling. After adding the sauce, place approximately two-thirds of a cheesy slice on top of the sauce, followed by a small amount of fresh lettuce. Finally, scoop a generous portion of the beef mixture onto each wrap, making sure to leave enough room at the edges to roll them up neatly.

Roll it Up 

Carefully roll each wrap tightly, ensuring the sides are tucked in to prevent the filling from spilling out. The key to rolling them properly is to keep the contents tightly packed but not overstuffed, which helps the taquitos hold their shape during cooking. Place each rolled taquito seam-side down into your air fryer or baking tray to ensure they stay intact while they cook. Make sure they are arranged in a single layer without overlapping, which ensures an even crispness across all of the taquitos.

Top and Cook 

After rolling up your taquitos, top each one with the remaining burger sauce and sprinkle the grated mozzarella cheese on top. This extra cheese will melt beautifully, forming a golden, crispy top that adds flavor and texture. Preheat your air fryer or oven to 190°C (375°F) and cook the taquitos for about 5 minutes. Ingredients

  • 250g 5% fat beef mince

  • 1/2 onion, diced

  • 5 cherry tomatoes, halved

  • 1/2 tsp garlic

  • 1 tbsp tomato purée

  • 1 tbsp ketchup

  • 1 tbsp Worcester sauce

  • 150g passata

  • 1/2 beef stock cube

  • 1 tsp paprika

  • 1 tsp oregano

  • 6 mini wraps

  • 2 tbsp burger sauce* (see below for the recipe)

  • 4 cheesy slices

  • A bit of lettuce

  • 20g grated mozzarella

Directions

  • Fry the Filling  Start by frying the onion, minced beef, and tomatoes with the garlic in a frying pan. Let them cook until softened and the beef is browned through. Then, add in the ketchup, Worcester sauce, passata, beef stock, and seasoning. Stir it all together, and let it simmer for about 10 minutes until the mixture thickens up nicely.
  • Prep the Wraps  Microwave your mini wraps to make them soft and easy to work with. Then, take each wrap and spread about a teaspoon of burger sauce on the inside. Add around two-thirds of a cheesy slice to each wrap, followed by a bit of lettuce, and then a scoop of your beef mixture.
  • Roll it Up  Carefully roll up each wrap, tucking in the sides to hold everything in place. Place each taquito into your air fryer or oven.
  • Top and Cook  Top the taquitos with the remaining burger sauce and grated mozzarella. Air fry or bake them at 190°C for around 5 minutes, or until the cheese is melted, and the wraps are crispy and golden.

Notes

  • Watch the Cook Time  These taquitos can get crispy really quickly, so keep an eye on them as they cook in the air fryer or oven. Overcooking them can cause the wraps to become too hard and dry.
  • Don’t Overfill  While it’s tempting to pack in as much filling as possible, be careful not to overstuff your wraps. If they’re too full, they might burst open while cooking.
  • Cheese Placement  Make sure to place your cheese on top after assembling the taquitos, so it melts beautifully over the top without making the inside too greasy.
