It’s the perfect blend of tender potatoes, juicy beef, and melty mozzarella cheese with a tangy BBQ and piri piri kick. Whether you’re making this for dinner or a weekend treat, it’s sure to be a hit! Plus, it’s pretty simple to make no fancy skills needed!

Method

1.Prep the Potatoes

Start by microwaving the potato cubes for about 7 minutes to soften them. This helps them cook faster when you air fry or bake them later. Once the potatoes are done, take them out and spray them lightly with fry light to help them crisp up. Then, season them with salt, pepper, BBQ seasoning, and a pinch of piri piri seasoning to give them a delicious, flavorful base.

2.Crisp ‘Em Up

Now it’s time to give those potatoes a golden, crispy finish. Place the seasoned potato cubes in the air fryer and cook them at 200°C for 15-20 minutes. If you don’t have an air fryer, you can also use the oven just bake them at around 200°C for about 40 minutes, or until they’re nice and crispy. You’ll want to make sure they’re golden brown on the outside, but soft on the inside for that perfect texture.

3.Cook the Beef

While the potatoes are crisping up, heat the olive oil in a frying pan over medium heat. Once the oil is hot, add the chopped onion and cook them with a little salt and balsamic vinegar. The vinegar helps to bring out the sweetness of the onions while they soften. Stir them occasionally and cook for about 5 minutes or until they’re softened and slightly caramelized.

4.Add the Beef

Once your onions are ready, add the 5% fat beef to the pan. Stir it occasionally to break it up as it cooks, and cook it through until it’s browned all over. Once the beef is cooked, add the BBQ seasoning and piri piri seasoning to the pan. Stir in the seasonings along with a little more salt and pepper to taste. This will give the beef a rich, smoky flavor that pairs beautifully with the potatoes.

5.Make It Saucy

After the beef has browned and the seasonings have been mixed in, it’s time to add a bit of sauce. Stir in the tomato puree, balsamic vinegar, Worcestershire sauce, and honey. These ingredients combine to create a tangy and sweet sauce that complements the savory beef. Add a splash of water (around 20ml) to loosen everything up and let the sauce simmer for a few minutes. This allows the flavors to meld together and makes the beef mixture a little juicier.

6.Combine & Melt

Once the potatoes are done and the beef mixture is ready, it’s time to bring everything together. Add the crispy potatoes into the pan with the beef and sauce. Stir everything together gently, ensuring that the potatoes get coated in the savory beef mixture. Next, stir in half of the grated mozzarella cheese, letting it melt into the beef and potatoes. Once the cheese has melted, sprinkle the remaining cheese on top. Cover the pan with a lid or some foil and let it sit for a few minutes to allow the cheese to melt perfectly.

7.Top It Off

Finally, it’s time to add those finishing touches. Once the cheese is all melty and gooey, drizzle BBQ piri sauce and peri peri mayo on top for an extra kick. Sprinkle with fresh parsley and chopped spring onions for a burst of color and flavor. Finish with a few crispy onions for that perfect crunch. Now, it’s ready to serve!

Notes

  • When microwaving the potatoes, make sure they’re evenly spaced in the bowl for quicker and more uniform cooking.
  • Keep an eye on the potatoes as they air fry or bake, as different appliances may have slight variations in cooking times.
  • If you’re adding toppings like BBQ piri sauce or peri peri mayo, go light at first you can always add more if you like it extra saucy!
