It’s full of healthy hidden veggies and lean turkey, with a protein-packed white sauce that’s both delicious and satisfying. Plus, you get to use up all those leftovers from the holiday feast, making it the perfect dish for using up extra bits and bobs from the fridge. Method 

1. Prepare the Veg 

Start by chopping up your vegetables. I used a mix of onion, celery, carrot, baby plum tomatoes, and mushrooms. You can get creative and use whatever veggies you have lying around in your fridge. Add them to a large frying pan and cook them for a few minutes until they begin to soften. Season with garlic granules, oregano, thyme, salt, and pepper to bring out those festive flavors. The aroma of the herbs and garlic as they cook will instantly get you into the holiday spirit!

2. Make the White Sauce 

While your veggies are cooking, it’s time to make the creamy white sauce. In a food processor or blender, blend the low-fat cottage cheese, lightest cream cheese, and skimmed milk together until smooth. This creates a rich, protein-packed sauce that’s perfect for layering in the lasagne. Once it’s blended to a smooth consistency, set the sauce aside for later use. This step ensures you’re ready to build your layers without any interruptions.

3. Cook the Turkey 

Next, take your turkey mince (or leftover turkey breast) and brown it in a separate pan. You’ll want to cook it until it’s fully browned and cooked through, making sure to break up the meat into small pieces. Now comes the fun part: assembling the lasagne! In a large baking dish, start by spooning 1/3 of the turkey and vegetable mixture into the dish as your first layer. Follow this with a layer of lasagne sheets, placing them on top of the turkey mixture. Then, spread 1/3 of your creamy white sauce over the lasagne sheets, ensuring it’s evenly covered. Repeat this layering process two more times until you’ve used up all the turkey mix, lasagne sheets, and white sauce. The layers will stack nicely, creating a hearty and flavorful base for your lasagne.

5. Top It Off 

Once the lasagne is layered, it’s time to add the finishing touches. Sprinkle the mozzarella and cheddar mix, parmesan, and brie on top of the lasagne for a deliciously cheesy topping. Then, take little blobs of cranberry sauce and place them randomly on top of the cheese. This will add a festive burst of flavor and sweetness to each bite. Cover the dish with aluminum foil and bake it in a preheated oven at 200°C (fan) for 30 minutes. The foil will help to cook the lasagne evenly, trapping in moisture and ensuring the layers don’t dry out.

6. Set and Serve 

After 30 minutes, remove the foil and return the lasagne to the oven for an additional 10 minutes. This will help the cheese on top to melt and bubble beautifully. Once done, take the lasagne out of the oven and let it sit for a few minutes to set. This step is important because it helps the lasagne hold its shape when you slice it. After it’s set, slice it into generous portions and serve. The combination of the tender turkey, hidden veggies, and melty cheese will make this lasagne a holiday hit!

Ingredients

  • 500g turkey mince (I used 2% fat, or you could use leftover turkey breast!)

  • Whatever veg you have lying around! I used 1 onion, 2 celery stalks, 1 large carrot, 16 baby plum tomatoes, and a couple of mushrooms

  • 1 vegetable stock pot with 150ml water

  • 1 tbsp garlic granules

  • 1 tbsp oregano

  • 1 tbsp thyme

  • Salt + pepper to taste

  • For the white sauce

  • 230g low-fat cottage cheese

  • 50g lightest cream cheese

  • 70ml skimmed milk

  • For the rest

  • 11 lasagne sheets (210g)

  • 60g mozzarella/cheddar mix

  • 10g parmesan

  • 70g brie

  • 20g cranberry sauce

  • A few thyme sprigs

Directions

  • Layer the Lasagne  In a large baking dish, start by adding 1/3 of the turkey mix, followed by a layer of lasagne sheets. Then, add 1/3 of the white sauce. Repeat this layering process two more times until you’ve used up all your ingredients.
  • Top It Off  Sprinkle mozzarella, cheddar, parmesan, and brie on top of your lasagne, and add little blobs of cranberry sauce for a festive touch. Cover the dish with foil and bake at 200°C (fan) for 30 minutes. After that, remove the foil and bake for another 10 minutes until the cheese is melted and bubbly.
  • Set and Serve  Let your lasagne sit for a few minutes to set before slicing into delicious portions.

Notes

  • Don’t Overcrowd the Pan  When cooking the turkey and vegetables, make sure the pan isn’t too crowded. This allows the turkey to brown properly and the veggies to soften evenly.
  • Let the Lasagne Set  After baking, it’s tempting to dive right in, but letting the lasagne sit for a few minutes helps it set and makes it easier to slice.
  • Layer Evenly  When layering the turkey mix, lasagne sheets, and sauce, try to distribute the ingredients evenly for a perfect bite every time!
